澱粉酵素 (2400 DU)

澱粉酵素可催化水解作用，使α-1, 4糖苷鍵多醣類分解成糊精、寡糖、麥芽糖與D-葡萄糖。澱粉酵素來源有動物、菌類和植物。胰酵素和胰脂酶包含動物的胰腺取得的澱粉酵素，通常是豬的胰腺。澱粉酵素也可以從大麥麥芽和米麴菌取得。澱粉酵素有不同種類。這些酵素依據糖苷鍵斷裂的方式而分類。α澱粉酵素水解α-1,4糖苷鍵，隨機產生了糊精、寡糖和單醣。α澱粉水解酵素為內切型酵素。外切型澱粉酵素只由多醣鏈的非還原端水解α-1, 4糖苷鍵。外切型澱粉酵素包含了β澱粉酵素和澱粉葡萄糖化酵素（γ-澱粉酵素、澱粉葡萄糖）。β澱粉酵素產生β-限制糊精和麥芽糖，γ澱粉酵素則產生葡萄糖。澱粉酵素被作為消化劑使用。澱粉酵素活性是以DU為單位。

麥芽糖酵素 (125 MWU*)

麥芽糖酵素由小腸邊緣的細胞產生，以分解雙醣類。麥芽糖酵素屬於醣酵素（是水解酵素的子類），而其水解的雙醣即為麥芽糖。

 

麥芽糖酵素就和其他酵素一樣，其基質（麥芽糖）和活性部位結合。當麥芽糖和麥芽糖酵素結合，麥芽糖就被水解，分解轉變出產物（即二個á-葡萄糖分子）。這個過程是因為其中一個葡萄糖鍵的首個碳和另外一個葡萄糖的第四個碳（1-4鍵）之間的糖苷鍵被破壞。

蔗糖酵素參與蔗糖水解成果糖和葡萄糖的過程。

 

鎂（碳酸鎂）

纖維素酵素是一種酵素複合物，可以將纖維素分解成β葡萄糖。纖維素酵素主要產生於草食性動物反芻室的共生菌。除了反芻動物之外，大多數的動物（包含人類）不能自體產生纖維素酵素，也因此不能利用大部分存在於植物的能量。

 

能夠水解半纖維素的酵素通常稱為半纖維素水解酶，同時被歸類為纖維素酵素。可以破壞木質素的酵素有時候也會被歸類為纖維素酵素，但這種分法常被認為是錯誤的。纖維素是一種不可消化的植物多醣類，也是植物細胞壁主要的組成物。纖維素酵素具有分解纖維素作用，也就是說可以水解纖維素。纖維素酵素水解纖維素的β-D-1, 4-糖苷鍵。

 

取自長枝木黴菌的纖維素酵素是由一種酵素複合物組成，其組成物有纖維素酵素、葡萄糖苷酵素、纖維二糖水解酶和葡聚醣酵素。這種複合物可以將纖維素轉換成β-葡聚糖，最終再轉換成D-葡萄糖。纖維素酵素作為消化輔助。纖維素酵素的活性單位為CU。

 

麥芽糖酵素 (125 MWU*)

麥芽糖酵素由小腸邊緣的細胞產生，以分解雙醣類。麥芽糖酵素屬於醣酵素（是水解酵素的子類），而其水解的雙醣即為麥芽糖。

 

麥芽糖酵素就和其他酵素一樣，其基質（麥芽糖）和活性部位結合。當麥芽糖和麥芽糖酵素結合，麥芽糖就被水解，分解轉變出產物（即二個á-葡萄糖分子）。這個過程是因為其中一個葡萄糖鍵的首個碳和另外一個葡萄糖的第四個碳（1-4鍵）之間的糖苷鍵被破壞。

蔗糖酵素參與蔗糖水解成果糖和葡萄糖的過程。

 

鎂（碳酸鎂）

富含鎂的食物包括了粗穀類、堅果和綠色蔬菜。綠葉蔬菜含有豐富的鎂，主要是因為其葉綠素。肉類、澱粉類和牛奶的鎂含量較少。經過加工的食物基本上的鎂含量都很低。在美國年紀大於九歲的男性，每日的鎂食用量估計大約是323毫克；年紀大於九歲的女性則大約是228毫克。鎂是牙齒跟骨骼的組成物，並且和鈉、鉀與鈣協同參與醣類代謝，維持肌肉和神經的正常功能。
